Mtedza Stew

1 chicken, cut into pieces
1 cup roasted, skinned unsalted peanuts, chopped up
1 tsp salt
1 sweet potato
1 onion, cut in quarters
1 shelled hard boiled egg per person
4 cups water or chicken stock
Simmer the chicken in 1 cup water and salt for 1/2 hour. Add peanuts, onion and whole peeled sweet potato. Simmer another 1/2 or 1 hour until the chicken is tender. To serve, remove the sweet potato and onion, slice both and place on a common plate. Add the hard boiled eggs to the stew. Add sliced oranges, sliced banana, sliced tomatoes, small hot chillies, etc to the common plate. Serve the stew over rice. Everyone gets an egg. people can add what they want from the common plate.

 

Sosaties

1 leg of fresh mutton (sheep) or 4 pounds of fresh pork and beef
2 large onions, sliced
1 Tbs curry powder
2 Tbs brown sugar
2 cups vinegar, white (must be enough to cover the meat)
1 small lemon, sliced
1 cup water
1 tsp salt
Cut the meat into 3/4 to 1 inch squares. Skewer the meat on wood skewers that have been soaked in water. Boil the onions in the water until soft, add all the remaining ingredients, bring to a boil and simmer 2-3 minutes. Allow to cool then pour over the meat and mix to make sure all the meat is in contact with the sause. Keep in the refrigerator for 2-3 days. Grill the meat over charcoal. Watch the meat well, because of the sugar, it can char if the fire is too hot.
